Honestly, I think it's pretty alright in a low-power cube. It wouldn't be my first choice, but it's a cantrip that you can play as a 3/3 flyer from your graveyard.

If you're dead-set on only running one, I'd go for the Channeler specifically because it's a looter/tarmogoyf. It feels like it fits into more decks than the Arcanist does, at least to me.

Underworld Breach actually wouldn't function properly if it were a Sorcery, since it relies on giving stuff in your yard Escape. If it were a Sorcery, making it so that any subsequent cards put into your graveyard also had Escape would involve quite a bit of jank.
