I probably would, now that you mention it. You can't graft a counter to the creature entering the battlefield to make it bigger than Experiment Two and trigger evolve. Evolve will only trigger if the other creature entering the battlefield is bigger than Experiment Two the moment it hits play, before counters get grafted around.

"spells matter" generally, and prowess specifically are definitely part of my list and it plays at a great level for me. Not having "best-of" cube helps a little there.
I'd definitely recommend using token spells as ways keep spell count high while effecting the board. This is the same reasoning behind bestow in Theros block.

Does Graft and Evolve being on the same card cause confusion? Cause it doesn't work like I would want it to, sadly.

It kinda does, but basically if you tell drafters you can't "cheat it" they understand.
Evolve checks on the creature entering and on the trigger resolving, so you only get a counter if it's bigger both times.

So no playing a 2/1, grafting something off then hey! a 3/2! lets evolve.
