I've not found Survival to be oppressive or honestly even all that good for a while now. The tempo cost of 2 drop enchantment and 1 mana every time you need to use it is very real. I can't remember the last time I saw it in play and thought it was taking over the game.
I've run Fastbond for ages and a lot of drafts it doesn't even make someone's deck. When it's good it's very good, but it does come with some fairly severe deckbuilding requirements.

The problem with legacy is that there aren't really any budget lists, as even the cheaper decks have at least a few expensive cards in them. Your best bet is looking at mono-colour decks, of which there are a few, but they tend not to have a lot of staples that you can easily transfer over to a...
Do you have any legacy cards already? Some decks have cheap parts and expensive parts, but the expensive parts can be stuff like fetches, or Cavern of Souls or some other modern staples.
I don't mind Geist so much because a 2/2 is so fragile in combat. If you have easy ways to make it unblockable, it's a lot more obnoxious, but as is I think it's fine.
Obviously the exact opposite of Kitchen Finks is....

I put Finks in my gold section because it can be used, and is wanted, by Green and White decks about equally. I agree that it's not super important where it goes, though.
