the difficulty i'm having is finding the right fatties
I like fatties, and test a lot of them. When you say "too much" do you mean too powerful? I don't think Elesh Norn is too good. Here's a couple I didn't see on your list that I like:
Bloodfire Colossus
Maelstrom wanderer (I know it doesn't reanimate well)

As far as your list goes, of things I've tested to some extent:

Akromas were both highly annoying with their protection/clock+wall.
I've played with both angel and rider, players don't seem to particularly care but exile is strong.
Artisan sucks since it's a cast trigger.
Hellkite is sweet but kinda boring.
Damia almost never gets played, but when she does she's unbelievable.
Demon sucks; getting greedy is as memorable as getting thousand-for-oned.
Elderscale wurm is just green platinum cards that I see you don't like.
I like elesh norn, very powerful.
Grisel is the 'top dog' black creature in my list.
Screw shroud. (inkwell)
Iona is just boring.
Same for Jin
Ked Levi is extremely narrow... never found a proper home.
Battlesphere does fine on its own and quickly became a favorite in my list.
I've tried both platinums and stuck with angel after the big boy was near-impossible for too many decks to kill.
rune-scarred demon and sphinx of uthuun Are both in my list and do fine, flying fatties close games fast against a lot of decks, and they're still sweet to reanimate early without being as crushing as Akroma or something.
simic sky swallower is a house, same deal as above but harder to kill.
 
I think the most interesting thing it did, please ignore this next card, was get mass polymorphed into play alongside a siege-gang commander, stacking the triggers so the goblins come in after everything bounces, and he could re-cast the commander next turn.

if you want combo reanimator to be a thing but give people a chance, I think there was some article (might actually have been jasons) on CFB where some dude made reanimator a bunch more fair by keeping all the broken cards in, but sliding back the reanimation spells a turn to 3 and 4 instead of 1 and 2.
Maybe you want 2 and 3?

I was flipping through a physical pile of cards when I came across Pongify, but Rapid Hybridization is actually what got me thinking. I know you can't always apply lessons from Constructed directly to cube, but I noticed that there aren't any Standard decks using Curse of the Swine, while the new Pongify is at least playable in aggro. Instant speed and costing one mana seem like a big deal, too, versus sorcery speed and three mana.

Unless you really need to turn their whole team into 2/2 boars, at which point, Curse is more of a G/W hoser than a removal spell.

mono-U has been known to sideboard curse, but the card is fairly bad and mono-U is also well-known for its ability to deal with or render irrelevant vanilla tokens, which of course is why they rapidly hybridize stuff. it also makes a 3/3 when you have a thassa, it's a nice fit
 
It's 6 mana for "target creature gets -2/-2". If it lives that long (and it's ripe for lot's of tempo loss against someone waiting for you to pump 4 mana into it).

I'm not a fan, but clearly against a removal light deck, this card will destroy people if left alone.
 
I like level cards, they just suck in powerful environments because the mechanic itself is pretty lousy in general. I don't have a "half removal half threats" cube so they do just fine in mine. Cheap drops you don't hate drawing late.

I like everything, but Assassin is legit IMO. It's '6 mana' to remove something, yes, but that can be conveniently staggered over the first 3 turns of the game in a way that forces the opponent to have an immediate answer or risk having their team gunned down every turn.
 
i dont think anyone was saying that.

not sure if you thought so but i have to make sure nobody ever thinks that i said anything of the sort

i have known some to replace one of the 'o's in turbofog with another vowel

I don't really see her doing anything in the average cube, but she's neat without being stupid. I'll give her a shot.

After messing around with her a bit she takes you from 4 to 7 if you don't miss a land drop; pretty sweet. Exploring without having to pay was deceptively powerful- I knew it was good, but it was better than I thought.
